A note on group dinners out

Now, don’t get me wrong. I love group dinners. There’s all the gossiping, trash-talking, over-indulging and general merriment that you just can’t find in many other situations. 

But here’s the thing:

I don’t want to share food.

It’s not that I have some weird issue with other people eating off my plate, as in “Joey doesn’t share food.” It’s that I don’t want to get 12 small plates and pass them around and pretend like I’m eating anywhere near the amount of everyone else. 

And let’s be honest, it’s not the lack of food that’s at issue here. It’s the cash. 

You see, before I go out for a dinner like this, you know what I do? I eat dinner.

I’m sure many other vegetarians have found themselves in a similar situation. You’re friends eat meat and that’s fine. They try to help you out and get a couple options for you but in the end, you leave hungry right after splitting the bill evenly.

So fellow vegetarians, don’t put yourself in this position. Stand up and say “I’m just going to go ahead and order a dinner for myself.” And when all your friends say “aw, no, it’s okay, we’ll get some veggie stuff for you,” just let them know it’s not their problem to make sure you’re fed, it’s your own. Or you could make something up like germaphobia or tell them you’re coming down with bubonic plague or whatever. Your choice.

Vegetarian Stuffed Red Bell Peppers
Mmmmmmm… these were delicious! I kinda wish I had made more. I hadn’t even planned on making them but when I looked in my fridge this afternoon and realized I had all the necessary ingredients I thought “hey, that sounds good.”
What you’ll need:
3 cloves garlic, minced the f-up!
1/2 red onion, chopped son!
2 zucchini, cut into small pieces fool!
1 large handful of spinach
1 smaller handful of fresh basil
1/2 jar of diced sun-dried tomatoes
1 package of meatless ground beef
some cayenne pepper - let’s say 2 tsp. or so
red peppers for stuffing
What you do with all that:
Get the onion and garlic going in a large pan with a little oil. Stir it around for a few minutes then add in everything except the ground beef and spinach. Stir that around a while longer and add the beef, keep stirring and throw the spinach on top. Mix it all around and cook it until everything is edible. The spinach should be completely wilted and the beef starting to fry a bit.
Take the mix and shove it into the peppers. Put those on a baking sheet and toss ‘em in the oven at 350. If they stand on their own, leave them in about 20 minutes or less. If not, lay them down and rotate every 5-7 minutes. Each side will get a little blackened like they were barbecued. The peppers should be good and soft.
Take them out and eat! 
It’s that easy… ENJOY!
